Recipe of the Week - Instant Pot Orange Chicken

2 pounds chicken (2 chicken breasts)
1 cup orange juice
6 cloves of garlic
1 orange, zested
1 tablespoon grated/zested fresh ginger
1/4 cup soy sauce
1/4 cup brown sugar
1/4 cup white sugar
1 tablespoon rice vinegar
1/2 cup tomato sauce
Cut chicken into bite sized pieces.
Wash all items used to cut chicken.
Zest 1 tablespoon of ginger.
Turn instant pot to sauté mode.
Add 2 tablespoons of oil.
Add the chicken.
Add 1/4 cup orange juice.
Cook for 2 minutes.
Add the rest of the orange juice, orange zest, ginger, brown sugar, white sugar, garlic, soy sauce, tomato sauce, and rice vinegar.
Close the lid of the instant pot.
Press "pressure cook on instant pot" and set for 5 minutes.
Make sure the vent is sealed.
When it is done, vent the instant pot.
Add 2-4 tablespoons (more or less as needed) of cornstarch to the instant pot and mix.
Turn the instant pot to sauté.
Cook for a few minutes until the liquid thickens.
